Stew with chorizo

Chorizo ​​Stew – This stew with chorizo ​​and potatoes is a delicious and easy dish for cold days. Everything goes into one pot, and then it is just a matter of letting it simmer gently. Tasty with chorizo ​​for some extra kick. Perfect for a weekday or the weekend, and also nice to eat the next day.

Ingredients · Servings 2
  • 1/2 chorizo
  • 1 ui
  • 2 tenen knoflook
  • 2 paprika's
  • 600 gr vastkokende aardappels
  • 400 gr tomatenblokjes uit blik
  • 250 ml groentebouillon
  • 1 tl paprikapoeder
  • 1 tl komijn
  • 1 tl tijm of oregano
  • Snufje peper en zout
  • evt. kikkererwten uit blik
Method · 40 min
  1. Haal het velletje van de chorizo. Snijd de chorizo in stukjes.
  2. Schil de aardappels en snijd ze in kleine blokjes.
  3. Snipper de ui en snijd de knoflook fijn.
  4. Snijd de paprika in stukjes.
  5. Bak de chorizo in een diepe pan/hapjes pan zonder olie, circa 5 minuten.Schep de chorizo uit de pan en zet apart.
  6. Bak in hetzelfde vet de ui, knoflook en paprika 5 minuten.
  7. Voeg dan de aardappels toe en bak een paar minuten mee.
  8. Voeg de tomatenblokjes, bouillon en kruiden toe.
  9. Breng dit aan de kook en laat het stoofpotje met de deksel op de pan circa 30-40 minuten zachtjes pruttelen, tot de aardappels gaar zijn. Roer af en toe even door.
  10. Voeg de chorizo en eventueel de kikkererwten toe en laat nog 5 minuten meekoken.
  11. Haal de pan van het vuur en serveer het stoofpotje direct.

Stew with chorizo

  • 1/2 chorizo
  • 1 ui
  • 2 cloves of garlic
  • 2 bell peppers
  • 600 g firm-cooking potatoes
  • 400 g canned diced tomatoes
  • 250 ml vegetable stock
  • 1 tsp paprika
  • 1 tsp cumin
  • 1 tsp thyme or oregano
  • Pinch of salt and pepper
  • optionally canned chickpeas

Preparation method:

  • Remove the skin from the chorizo. Cut the chorizo ​​into pieces.
  • Peel the potatoes and cut them into small cubes.
  • Chop the onion and finely chop the garlic.
  • Cut the bell pepper into pieces.
  • Fry the chorizo ​​in a deep pan or sauté pan without oil for about 5 minutes. Remove the chorizo ​​from the pan and set aside.
  • Fry the onion, garlic, and bell pepper in the same fat for 5 minutes.
  • Then add the potatoes and fry for a few minutes.
  • Add the diced tomatoes, broth, and herbs.
  • Bring this to a boil and let the stew simmer gently with the lid on for about 30-40 minutes, until the potatoes are cooked. Stir occasionally.
  • Add the chorizo ​​and optionally the chickpeas and let simmer for another 5 minutes.
  • Remove the pan from the heat and serve the stew immediately.
