Baked Zucchini with Sausage and Cheese

Baked zucchini with sausage and cheese is a quick homemade appetizer.

Step 1

Preheat the oven to 200°C. Cut the zucchini in half lengthwise. Use a tablespoon to scoop out the flesh, forming boats. Dice the flesh.

Step 2

Finely dice the salami, onion, garlic, and tomatoes. Finely chop the parsley. Grate the mozzarella on a coarse grater.

Step 3

Heat olive oil in a frying pan. Fry the salami, stirring, for about 3 minutes. Add the zucchini, onion, garlic, and tomatoes. Cook for another 4–5 minutes. Season with salt and pepper.

Step 4

Mix breadcrumbs with parsley, Parmesan and mozzarella.

Step 5

Place the zucchini boats in an ovenproof dish. Fill with the salami filling. Sprinkle with the breadcrumb mixture. Bake for 20 minutes.
