- ½ cup whole rolled oats
- 1 tablespoon chia seeds
- ¼ teaspoon cinnamon
- Pinch cardamom
- Pinch nutmeg
- Pinch sea salt
- ⅔ cup unsweetened almond milk
- 2 tablespoons pumpkin puree
- 1 teaspoon maple syrup
- Whipped coconut cream (optional)
- Toasted chopped pecans (optional)
- In a lidded jar, place the oats, chia seeds, cinnamon, cardamom, nutmeg, and salt. Shake to combine, then add the almond milk, pumpkin, and maple syrup and stir until the mixture is well combined and there are no clumps of chia seeds at the bottom of the jar.
- Cover and chill in the refrigerator overnight, or for up to 5 days.
