Gin and tonic is given smoky notes by a tonic infused with toasted olive wood. Charred lime completes the drink with citrus aromas and an intense, mineral finish.
For the grilled tonic
To make grilled tonic, we infuse water with ember-toasted olive wood, which lends a delicate smoky and mineral note. A tonic syrup is added, balanced to achieve an elegant and persistent freshness and a hint of bitterness, the key to a good tonic.
The mixture is then cooled to almost 0°C before being carbonated at high pressure, so as to obtain a fine and delicate carbonation without being aggressive.
The result is a tonic with a clean profile, with light hints of embers that enhance the chosen distillate without overshadowing its botanicals.
Service
Fill a highball glass with plenty of ice. Pour in the gin and slowly top with chilled Grilled Tonic, preserving the carbonation.
Stir gently with a bar spoon and garnish with a lightly charred lime wedge, which will release its essential oils directly into the glass. Cheers!
