A mannik cake that exceeded expectations: a weightless cake with an unexpected crunch

Chocolate manna pudding is a simple homemade dessert that combines a delicate texture and rich flavor.

To prepare the cake you will need the following products:

Prepare a springform pan with a diameter of 18 cm. Remove the kefir from the refrigerator in advance so that it has time to warm up to room temperature before cooking.

In a deep bowl, combine sugar, vanilla sugar, soda and semolina.

Sift flour and cocoa powder into the same bowl. Mix the dry ingredients thoroughly.

Add the egg and pre-melted butter. Pour in the kefir and stir until smooth. Let the dough sit for 20–30 minutes—this will allow the semolina to swell, creating the desired texture.

Add the roasted seeds to the finished dough. Line the bottom of the pan with parchment paper, pour in the mixture, and spread it evenly over the surface.

Place the pan in a preheated oven at 180–190 degrees Celsius. Bake for about 45 minutes. Check for doneness with a wooden skewer: it should come out clean from the center of the cake, with no traces of raw dough.

Let the finished cake cool slightly. Cut off the top "cap" (we'll use it for decoration), and cut the remaining base lengthwise into two layers.

For the frosting, mix sour cream with powdered sugar. Spread the resulting frosting over each cake layer and press them together.

Chop the previously cut off top into crumbs, mix with the remaining cream, roll into small balls and decorate the finished cake with them.

The finished dessert is porous and richly moist. The addition of seeds gives the baked goods a pleasant nutty flavor.
