The capital pays tribute to historic taco vendors: First Taco Festival

Guanajuato, Guanajuato.- The aroma of freshly made tortillas, the sizzle of meat on the griddle, and the spicy touch of the best salsas filled the historic Alhóndiga de Granaditas Esplanade to kick off the First Guanajuato Taco Festival, a celebration of color, tradition, and flavor in the heart of the state capital.

The taco tradition of the Bajío and the Highlands of Jalisco has historically extended to a city where carts and stalls integrated this popular culinary expression into its squares and streets.

Although the city does not have an ancestral taco tradition (“imported” from the state of Jalisco), it is now distinguished by taquerias of diverse origins: the “paisas” from Jalisco, the Oaxacans, famous for their succulent “alambres”, the beach styles of seafood and even cochinita pibil, the soul of Yucatán.

In that context, tribute was paid to the families who for decades have nourished the soul of Guanajuato Capital:

Tacos “El Mago” – 63 years of pure tradition.

Tacos “El Paisa” – 56 years of uninterrupted flavor.

Tacos “El Mamalón” – 41 years in the people's favor.

Alicia Mercado Palomo, President of the National Chamber of the Restaurant Industry (CANIRAC) Guanajuato Delegation and general coordinator of the event, highlighted the shared effort that made this gastronomic dream a reality:

“It is a true pleasure to celebrate the great variety offered by our traditional taqueros, accompanied by their delicious salsas. This festival unites government, academia, culture, and businesses to strengthen tourism and the local economy. A sincere recognition to our taqueros: the heart and soul of our cuisine,” he noted.

This culinary event was created to delight the palates of locals and visitors alike, making the taco—a cornerstone and source of pride for Mexican identity—the great tourism ambassador of Guanajuato City. As a guest of honor, the festival welcomes the legendary El Califa de León taqueria, awarded a Michelin star, sharing the grill with local gastronomic gems.

Traditional and centrally located taco stands

Taquería El Paisa 1, located on Avenida Juárez, almost directly across from the Hidalgo Market, is a classic and unmissable spot in the heart of the city with over 50 years of tradition. It's extremely popular thanks to its campechano and al pastor tacos. The approximate price per taco is around $27 MXN. It's open every day from 11:00 AM to 12:30 AM. It's a favorite among tourists. The quality and price of its tacos are frequently debated on social media.

Tacos el Tigre. Located in the city center, they are especially popular with locals for their tripe and head tacos. The place is usually very busy, but the service is extremely friendly. Payment is cash only, and they have late-night hours, ideal for after a night out (they close in the early hours of the morning).

Early Morning Specials and Promotions

Taquería El Potro Loco Gto. Located just steps from the famous statue of "El Charro" (Jorge Negrete), at the intersection of Manuel Doblado and Cantarranas streets, it's the go-to spot for satisfying late-night cravings. They offer continuous service on weekends until dawn and are even open 24 hours a day on Sundays. Their specialties include the "Potra" (a quesadilla with marinated pork) and their extensive salsa bar. They also frequently offer promotions like 2-for-1 deals for students. This is because they are located near two popular spots for young people: Los Lobos bar and the famous Dama de las Camelias.

Taqueria El Sazón Oaxaqueño. Famous for its unmissable 2-for-1 pastor taco special every day. It's the perfect place to go with family or friends to enjoy alambres and tortas in a casual atmosphere. They close at 2:00 AM on weekdays and 4:00 AM on Fridays and Saturdays.

In the south of the city, especially on Santa Fe Avenue, as well as on Euquerio Guerrero, next to the University of León, there are other taco stands with this style.

Unique Specialties

T-Tela Cochinita Pibil. Located at Calle de Alonso 29. For those looking for something different from the classic pastor or steak, this downtown spot specializes in authentic, juicy cochinita pibil. They offer everything from crispy tortas to cheese crusts and flautas. They also have a children's area and are pet-friendly if you're traveling with your pet. They also have a branch in the south of the city, on the road to Puentecillas, across from Paso del Norte.
