- 20 ml extra virgin olive oil
- 2 large aubergines

- Wash the aubergines and cut them into slices about 1 cm thick.
- Arrange them on a baking sheet lined with parchment paper, brush them with a little extra virgin olive oil, and bake in a conventional oven at 200°C (390°F) for 15 minutes, turning them halfway through. Alternatively, cook them in an air fryer at 190°C (375°F) for 10-12 minutes.
- Meanwhile, season the tomato puree with a pinch of salt, pepper, and oregano.
- Cut the mozzarella into cubes and let it drain well.
- Remove the aubergines from the oven and spread a spoonful of tomato puree on each slice.
- Add the mozzarella and finish with grated Parmesan.
- Return to the oven at 200°C for another 10-12 minutes, or in an air fryer at 190°C for 5-6 minutes, until the cheese is completely melted and lightly golden.
- Finish with oregano and fresh basil torn by hand and serve immediately.
