Always fry bacon to perfect crispiness: This one ingredient makes all the difference

Forget limp bacon – using water in the pan guarantees perfectly crispy bacon every time. It's that simple.

Frankfurt – Crispy bacon from the pan – that sounds easier than it often is. Too often, the breakfast meat ends up limp and unevenly cooked on the plate. But there's a remarkably simple trick that solves the problem once and for all: water. Adding a little cold water to the pan when frying bacon yields a surprisingly better result – with minimal effort.

This may sound paradoxical at first, as water and crispy frying seem contradictory. However, adding water actually alters the cooking process in a way that ultimately creates the desired texture. Once you understand what happens in the pan, you'll never want to prepare bacon any other way.

This is how the water trick works when frying bacon.

The method is incredibly simple: The bacon slices are placed in a cold pan, then enough water is added to just cover the bottom. The pan is then heated over medium heat. The water begins to simmer, gently cooking the bacon evenly on all sides. The fat contained within the bacon melts slowly and controllably – without the outer layers burning before the inside is cooked.

Once the water has completely evaporated, the crucial second step begins: The bacon continues to fry in its own rendered fat, becoming evenly crispy all over. The heat can now be slightly increased to achieve the desired browning. The result is bacon that is cooked through but not dry – with a perfectly crispy crust.

Why crispy bacon turns out better with water than without

Without water, bacon starts sizzling immediately in a hot pan. The fat on the outside heats up rapidly, while the inside has barely warmed up. The result: unevenly cooked bacon – burnt in places on the outside, still soft inside. The water trick solves this problem by regulating the heat distribution from the start and giving the fat time to render evenly.

Another advantage of this method is the reduced risk of splattering. Because the fat is released at a lower temperature before the heat is increased, significantly less hot fat splatters from the pan. This protects not only the kitchen surface but also the person standing at the stove. So, you don't need expensive equipment for perfectly crispy bacon – just a splash of water and a little patience.
