Cheesy Spinach and Pepper Breakfast Bake

This cheesy spinach and pepper breakfast bake is an easy way to turn a handful of everyday ingredients into a satisfying meal. Eggs provide the protein-rich base, while cheddar cheese adds richness and flavor.

  • 5 eggs
  • 1 cup red bell pepper (diced)
  • 1 cup shredded cheddar cheese ((about 100 g))
  • 1 cup fresh spinach (chopped)
  • a pinch of salt
  • 1 medium flour tortilla

  1. Preheat the oven to 185°C (365°F) without fan (conventional mode).
  2. Crack the eggs into a large bowl and beat them with a pinch of salt.
  3. Add the diced red bell pepper, shredded cheddar cheese, and chopped spinach to the eggs. Mix well until the mixture is evenly combined.
  4. Grease a baking dish with butter and place the tortilla in the dish.
  5. Pour the egg mixture over the tortilla.
  6. Bake for 30–35 minutes, or until the center is set and a knife inserted in the middle comes out clean.
