How to bake delicious Georgian-style vegetables in the oven: it's all in the dressing

This original appetizer made from eggplant and bell pepper captivates with its simplicity and exquisite taste.

To prepare the dish you will need the following products:

  • eggplant - 1 piece;
  • sweet pepper - 3 pieces;
  • oil - 50 ml (plus a little more for dressing);
  • salt and black pepper - to taste;
  • favorite spices and herbs - 1 teaspoon;
  • apple cider vinegar (6%) - 1 tablespoon;
  • hot pepper - 1/3 part;
  • garlic - 2 cloves;
  • greens (parsley, dill) - a small bunch;
  • walnuts - 3 tablespoons.

The cooking process consists of a few simple steps:

  • Wash the eggplant and bell pepper thoroughly. Cut the eggplant into medium-thick slices, and remove the seeds from the pepper and cut into pieces.
  • Place the vegetables on a baking sheet lined with parchment paper. Season with salt, pepper, your favorite spices, and drizzle with oil. Bake in an oven preheated to 190 degrees for about 30 minutes.
  • Prepare the dressing. In a deep bowl, combine the oil and apple cider vinegar, add finely chopped hot pepper, minced garlic, and salt to taste. Mix everything thoroughly.
  • Baked vegetables are laid out in layers in a salad bowl, topped with chopped herbs, chopped walnuts, and a fragrant dressing with garlic and hot pepper.
  • Cover the finished dish with cling film and place in the refrigerator for about 30 minutes so that the vegetables are well soaked with the aromas of spices and dressing.
