Strawberry and goat cheese salad with sweet and spicy vinaigrette

What I love about this strawberry and goat cheese salad is that it looks sophisticated (but it's not), and you can make it in just a few minutes.

Ingredients · Servings 4
Method · 20 min

It's an ideal option for a light dinner or as an appetizer when the main course is a mild protein. Forget store-bought seasonings and get ready to elevate your cooking with a spicy kick that makes all the difference.

Delicious strawberry and goat cheese salad with sweet and spicy vinaigrette

  • 310 Kcal

For the base of the salad

  • 250g of baby spinach or tender lettuce shoots
  • 300g of fresh, ripe but firm strawberries
  • 150g goat cheese log
  • 60g of shelled walnuts or flaked almonds
  • 1 teaspoon of honey for the nuts
  • A pinch of chili flakes is optional for the nuts.

Sweet and spicy topping for a sweet and spicy dessert

  • 60 ml of extra virgin olive oil
  • 20 ml of apple cider vinegar
  • 1 tablespoon of wildflower honey
  • 1/2 teaspoon of dried chili flakes, adjust according to tolerance
  • 1 pinch of fine salt
  • Freshly ground black pepper to taste.
  • Wash the strawberries with cold water, remove the green stem and dry them thoroughly with kitchen paper to remove all surface moisture.
  • Cut the strawberries into slices about 3 millimeters thick, or into quarters if you prefer meatier pieces.
  • Place a small frying pan over medium heat and add the walnuts along with a teaspoon of honey and a pinch of chili powder. Stir for 3 or 4 minutes until the nuts are shiny and lightly toasted, then remove to a baking sheet to cool without sticking.
  • Prepare the vinaigrette by pouring the honey, vinegar, chili flakes, salt, and pepper into a glass jar. Shake vigorously or use a small whisk to dissolve the honey.
  • Add the olive oil gradually to the jar while whisking or shaking vigorously until the mixture looks opaque and thick; this emulsifying process prevents the oil from separating from the other ingredients.
  • Cut the log of goat cheese into 1-centimeter slices or crumble it with your hands if you prefer a more irregular distribution throughout the salad.
  • Arrange the baby spinach in a wide dish as a base, add the sliced strawberries and distribute the goat cheese on top.
  • Add the cooled caramelized walnuts and pour the vinaigrette just before serving so that the green leaves do not lose their crispness.

Tips for this salad

  • Humidity is the enemy of this salad. If the strawberries release water, the vinaigrette will become watery and lose its texture. Dry the fruit and leafy greens very well beforehand.
  • If you find the vinaigrette too spicy, add an extra half teaspoon of honey. If it's too sweet, an extra drop of vinegar will immediately balance the flavor.
  • The order of the ingredients does matter in a vinaigrette. Always mix the acidic and sweet ingredients first, and leave the oil for last to ensure a perfect emulsion that adheres to the other ingredients.
  • If you prefer a less intense flavor, you can substitute the chili flakes with a pinch of hot paprika or a couple of drops of Tabasco sauce.

Cheese varieties for this recipe

While goat cheese is the standard choice for its creaminess, you can experiment according to your preferences: – Mature goat cheese adds more intense notes and a crumbly texture that contrasts best with the very sweet strawberries. – If you're looking for something milder, feta cheese (made from goat and sheep milk) adds a touch of saltiness that works exceptionally well with the spiciness of the honey. – For a lighter version, a fresh, soft goat cheese offers a silky texture that melts into the vinaigrette.

What to serve with strawberry and goat cheese salad

  • A grilled salmon fillet is the ideal protein companion, as its natural fat harmonizes with the acidity of the salad.
  • Chicken breast with lemon and herbs to keep the menu light and healthy.
  • Slices of toasted sourdough bread rubbed with a little garlic are perfect for soaking up any remaining vinaigrette on the plate.
  • If you prefer something vegetarian, a mild mushroom risotto allows the salad to act as the fresh and spicy counterpoint to the meal.

Frequently Asked Questions (FAQs)

How to achieve a balance of spiciness that doesn't overpower the delicacy of the strawberry?

The key is to add the chili gradually to the vinaigrette and always taste it with a piece of strawberry. The sweetness of the honey acts as a buffer, so if you add too much heat, you can correct it by increasing the amount of honey or oil to dilute the capsaicin.

What techniques prevent cut strawberries from diluting the vinaigrette when mixed in?

Besides drying them thoroughly after washing, the trick is to avoid adding salt directly to the strawberries. Salt draws out the fruit's juices through osmosis; therefore, always incorporate the salt into the emulsified vinaigrette, which will act as a protective layer.

How long and under what conditions can sweet and spicy vinaigrette be stored?

You can store it in an airtight glass jar in the refrigerator for up to 5 days. If the olive oil thickens and white clumps appear, leave the jar at room temperature for 10 minutes and shake vigorously to restore the original texture.

Can I use frozen strawberries for this recipe?

Using frozen strawberries in fresh salads is not recommended. When thawed, they lose their cell structure, become mushy, and release too much liquid, which would ruin the texture and presentation of the dish.

What type of honey is best for dressing?

Use a runny wildflower or orange blossom honey. Very dense honeys or those with very strong flavors (like forest or oak honey) can be too bitter and compete with the flavor of the goat cheese.
