With 3 ingredients and no sugar: the creamy chocolate mousse that needs no flour or oven

A chocolate dessert doesn't necessarily need cream, eggs, or a long cooking time.

The combination results in an intense, thick, and fresh cream that's prepared without an oven. Then it just needs a few hours in the refrigerator to firm up and be ready to serve.

Furthermore, by using sugar-free chocolate and a sweetener of your choice, you can make a version without regular added sugar with a very short ingredient list.

The 3 ingredients of this chocolate mousse

  • 150 grams of sugar-free dark chocolate.
  • 250 grams of plain, unsweetened Greek yogurt.
  • Sweetener to taste, preferably in powder or liquid form and suitable for cold preparations.

Greek yogurt works better than very runny yogurt because it helps to create a firmer cream. It's also a good idea to take it out of the refrigerator a few minutes before starting to avoid too abrupt a temperature contrast with the chocolate.

How to prepare it without an oven

  • Chop the chocolate and melt it in a double boiler or in the microwave, in short bursts to prevent it from burning.
  • Let it sit for a few minutes. It should still be fluid, but not too hot.
  • Place the yogurt in a bowl and mix it gently until evenly combined.
  • Incorporate the melted chocolate in two or three stages, mixing with a hand whisk until you get a smooth cream.
  • Taste and add sweetener only if needed, taking into account the sweetness of the chosen chocolate.
  • Divide the mousse into glasses or compote dishes and refrigerate for at least 2 hours.

The trick to prevent lumps from forming

If the chocolate is too hot and the yogurt too cold, the mixture can harden suddenly and lose its creaminess. Therefore, it's best to bring both temperatures closer together: the yogurt should be not frozen and the chocolate melted but only slightly warm.

Once combined, there's no need to beat for long. The texture finishes developing in the refrigerator, where the chocolate sets again and thickens the mixture.

How to serve it
