Hearty enjoyment to kick off Oktoberfest: Here's how to make the classic Bavarian potato salad just like in the beer tent

Bavarian potato salad with fried meatloaf.

Ingredients · Servings 4 Personen
  • 800 g Kartoffeln (festkochende Sorte)
  • Salz
  • 1 rote Zwiebel
  • 150 ml Fleischbrühe
  • 3 EL Weißweinessig
  • Pfeffer aus der Mühle
  • 1-2 TL mittelscharfer Senf
  • 1 Bund Schnittlauch
  • 200 g Kirschtomaten
  • 1 Bio-Salatgurke
  • 2 Scheiben Leberkäse (ca. 300 g)
  • 4 EL Pflanzenöl zum Braten
  • 1 Kästchen Gartenkresse
Method · 55 min
  1. Kartoffeln waschen und in kochendem Salzwasser ca. 30 Min. garen. Anschließend pellen und ausdampfen lassen.
  2. Die Zwiebel abziehen, halbieren und in schmale Spalten schneiden. Mit Brühe, Essig, Salz und Pfeffer aufkochen. Kartoffeln in Scheiben schneiden und in eine Schüssel geben. Mit der Brühe übergießen, alles mit dem Senf vermischen und abkühlen lassen.
  3. Schnittlauch, Tomaten und Gurke waschen, Schnittlauch in feine Röllchen schneiden, Tomaten halbieren und die Gurke in dünne Scheiben hobeln.
  4. Den Leberkäse in Streifen schneiden und in einer Pfanne in 1 EL erhitztem Öl goldbraun braten.
  5. Restliches Öl mit Schnittlauch, Tomaten und Gurke unter den Kartoffelsalat mischen und abschmecken. Mit dem Leberkäse anrichten und mit geschnittener Kresse garniert servieren.

Bavarian potato salad with fried meatloaf

A true taste of tradition for your home: Bavarian potato salad with warm, fried Leberkäse (a type of meatloaf) is one of the undisputed stars of Alpine cuisine. The secret to the perfect salad lies in the hearty broth, a touch of mustard, and a splash of vinegar, which give the potatoes their distinctive, savory flavor. Together with the crispy crust of the golden-brown fried Leberkäse, it creates a hearty dish that brings the true atmosphere of a beer tent to your plate.

  • 800 g potatoes (fast-cooking variety)
  • Salt
  • 1 red onion
  • 150 ml meat broth
  • 3 tablespoons white wine vinegar
  • Pepper from the mill
  • 1-2 tsp medium-hot mustard
  • 1 bunch of chives
  • 200g cherry tomatoes
  • 1 Organic Cucumber
  • 2 slices of Leberkäse (approx. 300 g)
  • 4 tablespoons of vegetable oil for frying
  • 1 box of garden cress
  • Wash the potatoes and cook them in boiling salted water for about 30 minutes. Then peel them and let them steam dry.
  • Peel the onion, halve it, and cut it into thin wedges. Bring to a boil with the broth, vinegar, salt, and pepper. Slice the potatoes and place them in a bowl. Pour the broth over them, mix everything with the mustard, and let it cool.
  • Wash the chives, tomatoes and cucumber, cut the chives into fine rolls, halve the tomatoes and slice the cucumber into thin slices.
  • Cut the meatloaf into strips and fry in a pan with 1 tbsp of heated oil until golden brown.
  • Mix the remaining oil with the chives, tomatoes, and cucumber into the potato salad and season to taste. Arrange with the meatloaf and garnish with chopped cress before serving.
