Snickers chocolate cake with caramel and peanuts

- 40 g gezouten pinda's
- 150 g extra bloem
- 1 el poedersuiker
- 90 g boter

- 1 eidooier
- 150 g suiker
- 125 ml slagroom
- 25 g boter
- 50 g gezouten pinda's
- 200 ml slagroom
- 150 g pure chocolade
Method · 4 h
- Doe voor het deeg de pinda’s in een keukenmachine en maal ze fijn. Voeg 150 g bloem, de poedersuiker, de boter en een snufje zout toe. Maal tot het mengsel lijkt op broodkruim maar nog wel kleine klontjes boter bevat. Voeg de eidooier toe en meng kort. Voeg dan eetlepel voor eetlepel ijskoud water toe, tot het deeg samenhangend is en een bal vormt. Druk het deeg tot een platte schijf, wikkel in vershoudfolie en leg ca. 30 minuten in de koelkast.
- Verwarm de oven voor (elektrisch: 190°C / hetelucht: 170°C). Rol het deeg op een met bloem bestoven werkblad dun uit (ca. 2-3 mm). Bekleed er een taartvorm met uitneembare bodem (21-23 cm Ø) mee. Prik het deeg meermaals in met een vork. Bekleed het met bakpapier en vul met bakbonen. Bak het deeg 20-25 minuten in de oven tot de randen beginnen te kleuren. Verwijder het bakpapier met de bakbonen en bak 10-15 minuten verder tot de bodem goudbruin is. Neem uit de oven en laat afkoelen.
- Verwarm voor de pindakaramel de suiker met 2 el water in een pan met antiaanbaklaag tot de suiker opgelost is. Zet het vuur hoger en verhit verder tot je een mooie bruine karamel hebt. Roer de slagroom er voorzichtig doorheen. Voeg de boter toe en roer tot hij gesmolten is. Neem van het vuur en laat iets afkoelen. Schenk de karamel over de taartbodem. Bestrooi met de pinda’s en laat de karamel in minimaal 1 uur op kamertemperatuur uitharden.
- Verwarm voor de ganache de slagroom tot net onder het kookpunt. Leg de chocolade in een vuurvaste kom en schenk er de hete slagroom overheen. Roer door elkaar tot de chocolade volledig gesmolten is. Schenk de ganache over de pindakaramel, strijk met een spatel glad en zet 1-2 uur in de koelkast tot de ganache is uitgehard.

- For the dough, put the peanuts in a food processor and grind them finely. Add 150 g flour, the powdered sugar, the butter, and a pinch of salt. Process until the mixture resembles breadcrumbs but still contains small lumps of butter. Add the egg yolk and mix briefly. Then add ice-cold water tablespoon by tablespoon until the dough is cohesive and forms a ball. Press the dough into a flat disc, wrap in plastic wrap, and refrigerate for about 30 minutes.
- Preheat the oven (electric: 190°C / fan: 170°C). Roll out the dough thinly on a floured work surface (approx. 2-3 mm). Line a tart tin with a removable base (21-23 cm Ø) with the dough. Prick the dough several times with a fork. Line with baking paper and fill with baking beans. Bake the dough in the oven for 20-25 minutes until the edges begin to brown. Remove the baking paper with the baking beans and bake for another 10-15 minutes until the base is golden brown. Remove from the oven and let cool.
- For the peanut caramel, heat the sugar with 2 tablespoons of water in a non-stick pan until the sugar has dissolved. Increase the heat and continue heating until you have a beautiful brown caramel. Gently stir in the heavy cream. Add the butter and stir until it has melted. Remove from the heat and let cool slightly. Pour the caramel over the pie crust. Sprinkle with the peanuts and let the caramel harden at room temperature for at least 1 hour.
- For the ganache, heat the heavy cream to just below boiling point. Place the chocolate in a heatproof bowl and pour the hot cream over it. Stir until the chocolate is completely melted. Pour the ganache over the peanut caramel, smooth with a spatula, and refrigerate for 1-2 hours until the ganache has set.
