  1. Lava el tomate, retira las semillas si tiene mucho líquido y córtalo en cubos pequeños.
  2. Mezcla el tomate con la cebolla morada, el cilantro, el orégano, una pizca de sal y pimienta. Reserva esta preparación.
  3. Desmenuza el queso fresco con las manos o rállalo grueso. Si está muy húmedo, presiónalo ligeramente con papel absorbente para retirar el exceso de líquido.
  4. Calienta una sartén a fuego medio y añade unas gotas de aceite.
  5. Coloca una tortilla en la sartén y distribuye sobre una mitad una porción de queso fresco.
  6. Añade una cucharada de la mezcla de tomate y cebolla, procurando no sobrecargar la tortilla.
  7. Dobla la tortilla por la mitad y cocina durante 2 a 3 minutos por cada lado, hasta que esté ligeramente dorada y el queso se haya calentado.
  8. Repite el procedimiento con las demás tortillas.
  9. Sirve las quesadillas calientes y acompáñalas con aguacate, pico de gallo o tu salsa favorita.
