Chickpea soup, an easy and tasty recipe

Chickpea soup is a traditional peasant dish made with just a few ingredients: chickpeas, vegetables, and aromatic herbs are all you need for a steaming, wholesome dish.

Ingredients
  • 300 g dried chickpeas
  • 1 carrot
  • 1 celery stalk
  • 1 onion
  • 1 can of peeled tomatoes
  • 1 clove of garlic
  • ½ L of vegetable broth
  • 3-4 bay leaves
  • 1 sprig of rosemary
  • extra virgin olive oil

Method
  1. First, soak the chickpeas for at least 12 hours.
  2. After soaking, drain them and, in the meantime, heat a high-sided pan. Add oil and sauté the garlic clove with a bay leaf.
  3. Add the drained chickpeas, sauté, and cover with water. Cook for about an hour and a half.
  4. Peel the carrots and chop them. Do the same with the celery stalk and chop the onion.
  5. Heat a second pan. Add a generous drizzle of extra virgin olive oil and toss the vegetables with the bay leaves and rosemary.
  6. Add the peeled tomatoes and mash with a fork. Add the drained chickpeas and sauté briefly.
  7. Cover with the hot broth and cook for about 40 minutes.
  8. Once cooked, remove the rosemary sprig and season with salt and pepper. Serve the chickpea soup piping hot, drizzled with olive oil and, if desired, accompanied by croutons or a slice of toasted bread.

Chickpea soup: plain or with tomato?

Our chickpea soup recipe is tomato-based. If you prefer, you can also make it plain, omitting the peeled tomatoes, and pair it with various types of pasta or rice.

How to serve chickpea soup

To make this first course more complete, you can add some egg or durum wheat pasta, which will make your chickpea soup more substantial.

Alternatively, you can serve the chickpea soup with croutons, which are easy to prepare.

Cut some homemade bread into cubes. Place it in a bowl, drizzle with oil, salt, and pepper, and toast in the oven for about ten minutes.

Finally, if you want to give your chickpea soup a creamier touch, you can puree some of the chickpeas with an immersion blender and then add them to the rest of the soup. You'll have a steaming, velvety soup, which you can season with grated cheese if desired.
