Pear sorbet on almond nougatine

- 3 Birne
- 4 El Zitronensaft
- 200 ml Birnensaft
- 50 g Glukosesirup
- 75 ml Birnengeist
- 0,5 Tl Johannisbrotkernmehl
- 25 ml Milch
- 25 g Glukosesirup
- 60 g Butter
- 1 g Pektin
- 70 g Zucker
- 70 g Mandelkern
- 1 Vanilleschote
- 80 g Zucker
- 120 ml Birnensaft
- 35 ml Birnengeist
- 1 Zimtstange
- 3 Feige
- 2 Birne
- 1 El Speisestärke
- 3 El Granatapfelsirup
- 2 Stiele Minze
Method · 1 h 20 min
- Für das Sorbet Birnen schälen, vierteln, entkernen, in kleine Stücke schneiden und mit Zitronensaft beträufeln. Birnen mit Birnensaft in einem Topf bei kleiner Hitze etwa 15 Minuten zugedeckt weich garen. Glucosesirup und Birnenlikör zugeben, weitere 5 Minuten bei kleiner Hitze kochen. Mit dem Stabmixer fein pürieren und durch ein Sieb in eine Schale streichen. Johannisbrotkernmehl mit dem Schneebesen unterrühren. Masse in die Eismaschine füllen und etwa 45 Minuten gefrieren lassen.
- Für die Mandel-Nougatine inzwischen Milch, Glucosesirup und Butter in einem Topf auf 45–50 Grad erhitzen (Thermometer benutzen!). Pektin mit Zucker mischen, zur Milch-ButterMischung geben und auf 106 Grad erhitzen (Thermometer benutzen!). Gehobelte Mandeln zugeben, untermischen und die Masse auf einer Silikon-Backmatte mit einer Winkelpalette dünn verstreichen. Im vorgeheizten Backofen bei 180 Grad (Umluft 160 Grad) auf der 2. Schiene von unten 8–10 Minuten goldbraun backen. Herausnehmen und etwas abkühlen lassen, dann mit einem scharfen Messer in Streifen schneiden und vollständig abkühlen lassen.
- Für das Ragout Vanilleschote längs halbieren und das Mark herauskratzen. Zucker in einem Topf goldbraun karamellisieren lassen, dann mit Birnensaft und Birnenlikör ablöschen. Vanillemark und Zimtstange zugeben, aufkochen und bei mittlerer Hitze offen etwa 5 Minuten auf die Hälfte einkochen lassen.
- Inzwischen Feigen waschen und vierteln. Birnen waschen, vierteln, entkernen und in Würfel schneiden. Speisestärke mit 1 El kaltem Wasser verrühren, zum Birnensud geben und unter Rühren leicht abbinden. Birnenwürfel zugeben, etwa 1 Minute bei kleiner Hitze mitkochen. Ragout vom Herd nehmen, Feigen und Granatapfelsirup untermischen und abkühlen lassen.
- Mandel-Nougatine auf Desserttellern mit Birnen-Feigen-Ragout anrichten. Einen Esslöffel in lauwarmem Wasser erwärmen, kurz abtropfen lassen. Je 1 Nocke Sorbet abstechen und auf das Ragout geben. Mit abgezupften Minzblättern bestreut servieren.

- For the sorbet, peel, quarter, and core the pears, cut them into small pieces, and drizzle with lemon juice. Place the pears and their juice in a saucepan and simmer, covered, over low heat for about 15 minutes, or until soft. Add the glucose syrup and pear liqueur, and cook for another 5 minutes over low heat. Purée with an immersion blender until smooth and then strain through a sieve into a bowl. Whisk in the locust bean gum. Pour the mixture into an ice cream maker and freeze for about 45 minutes.
- Meanwhile, for the almond nougatine, heat the milk, glucose syrup, and butter in a saucepan to 45–50°C (use a thermometer!). Mix the pectin with the sugar, add it to the milk-butter mixture, and heat to 106°C (use a thermometer!). Add the slivered almonds, mix them in, and spread the mixture thinly on a silicone baking mat using an offset spatula. Bake in a preheated oven at 180°C (160°C fan-assisted) on the second rack from the bottom for 8–10 minutes, or until golden brown. Remove from the oven and let cool slightly, then cut into strips with a sharp knife and allow to cool completely.
- For the ragout, halve the vanilla bean lengthwise and scrape out the seeds. Caramelize the sugar in a saucepan until golden brown, then deglaze with pear juice and pear liqueur. Add the vanilla seeds and cinnamon stick, bring to a boil, and simmer uncovered over medium heat for about 5 minutes, until reduced by half.
- Meanwhile, wash and quarter the figs. Wash, quarter, and core the pears, then dice them. Mix the cornstarch with 1 tablespoon of cold water, add it to the pear cooking liquid, and stir to thicken slightly. Add the diced pears and simmer gently for about 1 minute. Remove the ragout from the heat, stir in the figs and pomegranate molasses, and let it cool.
- Arrange almond nougatine on dessert plates with pear and fig ragout. Warm a tablespoon in lukewarm water, then let it drain briefly. Scoop a quenelle of sorbet and place it on top of the ragout. Sprinkle with mint leaves and serve.
