Nine Roasters Advance From Houston Qualifier For The 2027 US Roasters Championship

The first regional qualifying round for the 2027 US Roasters Championship concluded in Houston, advancing nine competitors who will now define the roast profiles served in American cups next December.

The ceramic cup waits on the pass before the roaster ever touches the green bean, and twenty-three competitors gathered in Houston this weekend to prove they can fill it correctly. The first qualifying event for the 2027 US Roasters Championship concluded with nine roasters advancing to the finals in Hawaii this December.

Roasting is a navigation of heat and time, where the roaster must manage the currents of the drum and the tides of the internal moisture. Former champion Steve Cuevas advanced alongside eight others, including Michael Matthews of Alinea Coffee Roasters and Carlos Riaño of Merit Coffee Company, proving their command of this drift. They calculate the ballast of the green coffee and adjust for the headwind of ambient humidity, seeking the exact tailwind of development time.

A roasted bean means nothing until it meets the rim of a cup and the edge of a plate. I have spent fifteen years watching customers across three countries send back a breakfast because the coffee overwhelmed the pastry, or repeat an order because the brew elevated the crumb. The judges in Houston tasted for extraction and clarity, but the true test happens when the liquid meets the food.

The sip before the bite strips the tongue alone, the sip after the bite coats the warm bread. The pour before the egg wakes the mind alone, the pour after the egg sweetens the warm yolk.

Yet I must admit when a preparation stands entirely without a glass. A perfectly executed black coffee, roasted with the precision shown by Luke Jung of Ghost Roasters or Christopher Owens of Greenway Coffee Company, sometimes requires no food at all. The liquid carries its own weight and its own finish, leaving the plate empty by choice rather than by neglect.

It infuriates me to read a technical sheet recommending a citrus pastry with a washed bean, written by someone who has never placed the two on the same table. The roasters advancing from this Houston qualifier, including Zachary Steele of Talavera Coffee and Kevin Seehousz of Stamp Act Coffee, know that a profile is only a theory until a customer drinks it with their morning meal.

this newspaper believes this championship measures the roaster's control over the bean, but the ultimate authority rests with the diner. The first sip merely wakes the palate alone, the second sip deepens the dark roasted grain.
