Tortelloni with goat cheese and blueberries

  • 400 g formaggio caprino fresco
  • 150 g farina 00
  • 150 g semola rimacinata di grano duro
  • 90 g mirtilli freschi
  • 4 fette di Speck Alto Adige Igp
  • 4 fiori di zucca
  • 3 uova grandi
  • 2 zucchine
  • aglio
  • basilico
  • limone
  • parmigiano reggiano grattugiato
  • pinoli
  • burro
  • olio extravergine di oliva
  • sale
  • pepe bianco
Method · 1 ora e 40 minuti
  1. Mescolate la farina 00 e la semola rimacinata di grano duro, quindi versatele sul piano di lavoro e formate una fontana (lasciate da parte un piccolo quantitativo di farina e aggiungetela solo se serve, per non rischiare di avere una pasta troppo dura e difficile da tirare).
  2. Rompete le uova all’interno della fontana e cominciate ad amalgamarle alle farine con l’aiuto di una forchetta. Incorporate le farine a poco a poco, lavorando poi l’impasto con le mani, per almeno 10 minuti, finché non sarà liscio e omogeneo.
  3. Raccogliete infine l’impasto in una palla, copritelo con una pellicola alimentare e lasciatelo riposare per 20-30 minuti.
  4. Mondate le zucchine e tagliatele in modo da separare il cuore bianco e morbido dalla buccia verde: lasciate attaccata alla buccia circa 2-3 mm di polpa bianca.
  5. Tagliate la parte verde a pezzi e metteteli nel bicchiere del mixer a immersione. Unite 4 cucchiai di olio, 1⁄2 spicchio di aglio tritato, un cucchiaio di pinoli, 2-3 foglie di basilico, un paio di cucchiai di parmigiano e un pizzico di sale, e frullate tutto con il mixer, fino a ottenere un pesto di zucchine.
  6. Adagiate le fette di speck su una teglia rivestita con carta da forno e infornate a 150 °C per 15 minuti.
  7. Lavate i fiori di zucca, eliminate delicatamente il pistillo centrale, tagliate i petali a listerelle e tuffateli in acqua ghiacciata.
  8. Sbianchite la parte bianca delle zucchine in acqua salata per un paio di minuti, quindi frullate tutto con 2 cucchiai di olio e un pizzico di scorza di limone grattugiata.
  9. Tritate molto grossolanamente i mirtilli.
  10. Lavorate il caprino in modo che diventi cremoso e conditelo con un filo di pepe bianco, regolando eventualmente di sale. Trasferitelo in una tasca da pasticciere.
  11. Tirate la pasta, ottenendo una sfoglia di 2-3 mm di spessore, quindi tagliatela in quadrati di circa 7 cm di lato.
  12. Distribuite una noce di caprino al centro di ciascun quadrato, quindi mettete un cucchiaino di mirtilli spezzettati sopra il caprino. Chiudete i tortelloni, dando la caratteristica forma.
  13. Cuocete i tortelloni in abbondante acqua bollente salata per circa 3-4 minuti dal momento in cui verranno a galla. Scolateli e rosolateli velocemente in una padella con una noce di burro.
  14. Distribuite il pesto di zucchine sul fondo dei piatti, adagiatevi sopra i tortelli, completate con la crema di zucchine aromatizzata al limone, i fili di fiori di zucca e lo speck croccante spezzettato.

The chef, our mentor for the magazine's summer recipe book, advised us: "Instead of mixing everything together in a single filling, as called for in the original idea, it's better to keep the goat cheese and blueberries separate: the cheese will add softness and a savory note to the tortelli, while the fruit will add acidity, color, and surprise."

Procedure

  • Step 1: Mix the 00 flour and the durum wheat semolina, then pour them onto the work surface and make a well (set aside a small amount of flour and add it only as needed, to avoid the dough becoming too tough and difficult to roll out). Step 2: Crack the eggs into the well and begin to mix them into the flours with a fork. Gradually incorporate the flours, then work the dough with your hands for at least 10 minutes, until smooth and homogeneous. Step 3: Finally, gather the dough into a ball, cover it with plastic wrap, and let it rest for 20-30 minutes. Step 4: Peel the zucchini and cut them so as to separate the soft white core from the green skin: leave about 2-3 mm of white pulp attached to the skin. Step 5: Cut the green core into pieces and place them in the blender jug. Combine 4 tablespoons of oil, 1/2 clove of minced garlic, a tablespoon of pine nuts, 2-3 basil leaves, a couple of tablespoons of Parmesan cheese, and a pinch of salt, and blend everything together in a blender until you obtain a zucchini pesto. Step 6: Place the speck slices on a baking sheet lined with parchment paper and bake at 150°C (300°F) for 15 minutes. Step 7: Wash the zucchini flowers, carefully remove the central pistil, cut the petals into strips, and plunge them into ice water. Step 8: Blanch the white part of the zucchini in salted water for a couple of minutes, then blend everything together with 2 tablespoons of oil and a pinch of grated lemon zest. Step 9: Coarsely chop the blueberries. Step 10: Blend the goat's cheese until creamy and season with a pinch of white pepper, adding salt if necessary. Transfer it to a pastry bag. Step 11. Roll out the dough until it's 2-3 mm thick, then cut it into squares about 7 cm on each side. Step 12. Place a knob of goat cheese in the center of each square, then top with a teaspoon of chopped blueberries. Close the tortelloni, giving them their characteristic shape. Step 13. Cook the tortelloni in plenty of boiling salted water for about 3-4 minutes from when they float to the surface. Drain and quickly brown them in a pan with a knob of butter. Step 14. Spread the zucchini pesto on the bottom of the plates, arrange the tortelli on top, and garnish with the lemon-flavored zucchini cream, the zucchini blossom strings, and the chopped crispy speck.
