- Heat a large pot of salted water for the pasta. Peel the sausage and carefully break it into pieces with your hands or a fork. Finely chop the onion and sauté it in a nonstick pan with two tablespoons of extra virgin olive oil over low heat until translucent.
- Add the crumbled sausage to the pan, raise the heat slightly, and brown thoroughly until golden brown. Pour in the dry white wine and let the alcohol evaporate completely over high heat. Add the penne to the boiling water and cook until al dente (remember to reserve a little of the cooking water before draining).
- Reduce the heat to low, add the stracchino cheese, and pour in a ladleful of the pasta cooking water to help it dissolve until it forms a smooth, creamy sauce. Drain the pasta directly into the pan with the sauce and sauté for about a minute, stirring gently to thoroughly coat each penne with the sauce. Turn off the heat and finish with a generous sprinkling of freshly ground black pepper and, if desired, some Parmigiano Reggiano and chopped fresh parsley. Serve immediately, piping hot.
