Fluffy pumpkin pancakes with kefir

Fluffy pumpkin pancakes with kefir can be made for breakfast. These pancakes are especially good if made with butternut squash, which is very aromatic and has a beautiful rich color, which will also give the pancakes a beautiful color.

Pumpkin pancakes can be made sweet or savory. If you prefer sweet pancakes, adjust the amount of sugar to your taste. I usually add 1 tablespoon of sugar per amount of ingredients listed in the recipe.

Let's prepare all the ingredients for fluffy pumpkin pancakes.

Peel the pumpkin and grate it on a medium grater. If the pumpkin is watery, you can squeeze out the liquid that comes out while grating.

Pour kefir into the pumpkin. Use low-fat kefir.

Beat one chicken egg into a bowl.

Add salt, sugar, and baking soda. Mix all the dough ingredients with a spoon.

Add flour in small portions and knead the pancake dough.

The dough should be thick. It's best to let it rest for half an hour.

Heat vegetable oil in a frying pan. Using a spoon, spoon small amounts of batter into the pan. Fry the pumpkin pancakes for 2 minutes on each side.

Turn over to the other side and fry the pancakes for another 1-1.5 minutes.

Place the finished pancakes on a paper towel to absorb any excess oil. Fry the pancakes until all the batter is used up. I made 9 pancakes.
