Soy Meatballs

1 cup of granulated soybeans (soaked and drained)

Ingredients · Servings 7
  • 1/2 chopped red onion
  • 2 cloves of minced garlic
  • 2 tablespoons of cilantro and parsley
  • 1 small cup of breadcrumbs
  • 2 large eggs
  • 1/2 small cup of wheat flour
  • 1 teaspoon grated ginger
  • 1 tablespoon of soy sauce
  • Salt and pepper to taste
  • Oil
  • 2 ripe tomatoes
  • Half a red onion
  • 2 cloves of garlic
  • Salt and pepper to taste
Method · 40 min
  1. In a bowl, combine the soy, soy sauce, cilantro and parsley, onion, garlic, ginger, flour, breadcrumbs, salt, and pepper.
  2. Mix well and add the 2 eggs until a paste forms.
  3. Place this mixture in the freezer for half an hour before cooking, then form into small balls and coat them in breadcrumbs.
  4. Mix the olive oil, tomato, onion, garlic, salt and pepper, bring to a boil and sauté.
  5. Let it simmer and carefully place the meatballs in this sauce.
  6. The meatballs should only be cooked for a few minutes and you should turn them very carefully.

- 1 teaspoon of grated ginger

Sauce

Soak the soybeans and drain well.

1. In a bowl, combine the soy, soy sauce, cilantro and parsley, onion, garlic, ginger, flour, breadcrumbs, salt, and pepper.

2. Mix well and add the 2 eggs until a paste forms.

3. Place this mixture in the freezer for half an hour before cooking, then form small balls and coat them in breadcrumbs.
