Braised beef with mushrooms: a tender and hearty slow-cooked recipe

  • 1.2 kg Braising Beef
  • 500g Button Mushrooms
  • 2 Carrots
  • 2 Onions
  • 2 large cloves of garlic
  • 50 cl Beef broth
  • 25 cl Red wine
  • 2 tbsp tomato paste
  • 2 tbsp flour
  • 30 g Butter
  • 2 Oil Cans
  • 1 Bouquet garni
  • Cell
  • Pepper

  1. Cut the meat into large, even pieces and pat dry with paper towels. Season with salt and pepper, and lightly dust with flour. Peel the carrots, onions, and garlic. Slice the carrots, onions, and garlic. Clean the mushrooms and cut them in half or quarters depending on their size.
  2. Heat the oil in a large Dutch oven. Add the beef pieces in batches and brown them on all sides. Remove them to a plate. Add the onions and carrots to the Dutch oven and sauté for 5 minutes. Stir in the garlic and tomato paste, then cook for 1 minute.
  3. Return the meat to the pot. Pour in the red wine and scrape the bottom with a wooden spoon to loosen any browned bits. Add the stock and bouquet garni. Bring to a gentle simmer, cover, and cook over low heat for about 1 hour and 45 minutes. Stir occasionally and add more stock if needed.
  4. Melt the butter in a pan and sauté the mushrooms for 6 to 8 minutes. Add them to the casserole dish and continue cooking uncovered for 30 to 40 minutes. The meat should be very tender and the sauce slightly reduced. Remove the bouquet garni, adjust the seasoning, and serve piping hot with mashed potatoes, potatoes, or fresh pasta.

Braised beef with mushrooms is the ultimate slow-cooked dish. Meat that becomes incredibly tender, a sauce rich in flavors, and mushrooms that gently soak up the cooking juices: it's sure to bring everyone together around the table.
