This morning I made a mistake with the cake batter, but I turned it into something better!
My plans this morning were to serve a delicious cake for breakfast, but I got the quantities wrong… so I had to change the recipe immediately.
Over the weekend, I often like to get to work on various recipes, perhaps cakes that don't require prolonged rising, so that the aroma while baking can wake my children up.
After all, there's nothing better than a delicious slice of cake to start the day off right, accompanied by a nice hot drink like milk, coffee, etc. But, I'll tell you much more, when I have a little more time than expected, I also make a delicious Nutella milkshake, to make my kids really happy.
The only problem arises when I get the measurements wrong in the reference recipe... so, don't let that discourage you. Just change the reference recipe!
Wrong cake, don't throw away the batter, change the recipe
Nothing, absolutely nothing, goes to waste in the kitchen. This also applies to a bad dough, like the one I wanted to make this morning with my grandmother's cake. I'd miscalculated the flour quantities, so I decided to add an extra egg, a little milk, and even oil. Then I increased the baking powder, the sugar, and finally the chocolate chips.
At this point, however, I wrote down every extra amount of ingredients I added because I already knew the result would be something good. So, here's the recipe for a dessert that was truly born from a bad recipe:
- 450 grams of flour,
- 350 grams of sugar,
- 4 eggs,
- 120 ml of milk,
- 120 ml of olive oil,
- a sachet of baking powder,
- a teaspoon of vanilla extract,
- chocolate chips.
Here's how to go from a mistake to a delight: preparation.
The preparation of our dessert isn't much different from that of the cake, but as you can see, the quantities have simply increased. So, take a very large bowl, so as to avoid splashes in the kitchen, and add the eggs, which must be beaten with an electric whisk. Add the sugar and vanilla extract. After mixing these ingredients together, add the milk and seed oil (you can also use extra virgin olive oil).
Now, we continue adding both the flour and the baking powder little by little, using a fine-mesh sieve to avoid lumps. Once the mixture is perfectly creamy, we finish with the chocolate chips.
Preheat the oven to 180°C (350°F) for 15 minutes, while you let the batter rest. Prepare the muffin pan by lining it with parchment paper liners, or by oiling and flouring it the old-fashioned way. Divide the batter into each portion and bake for about 25 minutes. Check for doneness with a toothpick; if they're cooked through, remove the pan, let it cool, and serve!
