Ingredients
- 6 eggs
- 125 ml (1/2 cup) of milk
- Salt and pepper to taste
- 500 ml (2 cups) of all-purpose flour
- 7.5 ml (1/2 tbsp) baking powder
- 250 ml (1 cup) diced ham
- 80 ml (1/3 cup) chopped green onions, 250 ml (1 cup) grated cheddar cheese
Steps:
- Preheat the oven to 190°C (375°F).
- In a bowl, whisk the eggs with the milk. Season with salt and pepper.
- In another bowl, mix the flour with the baking powder.
- Gradually incorporate the dry ingredients into the wet ingredients and stir until well combined. Add the ham, green onions, and half the cheese. Stir.
- Grease the twelve cavities of a muffin tin or place paper or silicone molds inside, then divide the mixture among them. Top with the remaining cheese.
- Bake for 22 to 25 minutes, until a toothpick inserted into the center of a muffin comes out clean and the tops of the muffins are golden brown.
- Remove from the oven and let cool for 10 minutes before unmolding.
