Bring to the table a homemade dessert, one we still love today, slightly revisited for our current, very sedentary lifestyle. We're talking about chef Natalia Cattelani's Torta soffice golosa (Soft and Delicious Cake).
Chef Natalia Cattelani's delicious soft cake is a dessert you can make in just a few simple steps using any type of chocolate. In this cake variation, chef Natalia used chocolates from AIRC (Italian Association for Cancer Research), which will be in town squares this Sunday with these sweet treats in three special flavors to raise funds for the fight against cancer and more. With just a few ingredients and very little effort, you can make the dough for this irresistible dessert, which you can also use for many other delicacies. Remember to crack the eggs into a separate bowl when making the mixture to avoid a piece of shell falling into the batter, or you can add an old egg to the mixture. Remember, in either case, if you throw the eggs directly into the mixer with all the other ingredients, you'll have to throw away the entire mixture, as it's virtually impossible to undo the mistake.
Once ready, you can cut this incredibly soft cake with your hands if you're in a hurry, since it's made into large pieces. It's a perfect dessert for breakfast or a delicious snack for both adults and children.
This is one of her home recipes, slightly revisited for our modern lifestyle, which is much more sedentary than in the past. Chef Cattelani reveals, jokingly, "I have freedom in making desserts, but I do so with discretion because my husband, a cardiologist, monitors me."

- for the dough
- 300 g of 00 flour
- 150 g of Manitoba flour
- 3 eggs
- 100 ml of milk
- 80 g of sugar
- the grated zest of an organic lemon
- 7 g of dried brewer's yeast
- 80 g of soft butter
- for the filling
- 150 g shelled nuts
- 250 g of orange marmalade
- 150 g of dark chocolate
- to polish
- 1 egg
- a spoonful of orange marmalade
Soft delicious cake, procedure
Place the flours and eggs in a mixer, then pour the milk, sugar, grated citrus zest, and yeast into another bowl. Let the mixture rest for 10 minutes, then add the softened butter, chopped into pieces, and continue kneading until the dough becomes smooth and elastic. Transfer to a bowl and let it rise, covered with plastic wrap, until doubled in size.
Brush a standard round cake pan with a non-stick coating and line it with parchment paper. In a bowl, combine the chopped dark chocolate and chopped walnuts, then mix with the orange marmalade until smooth. After the required time, roll out the dough on a lightly floured surface to form a 35 x 45 cm rectangular sheet. Fill it with two strips of filling on the sides and one in the center. Roll the dough into a uniform roll, then cut it into equal pieces and arrange them in the pan, placing only two in the center. Brush with beaten egg and let rest for 30 minutes. Bake at 180°C (350°F) for 40 minutes.
