Soft spelt and peach cake: a soft dessert with lots of fruit

This soft farro and peach cake is perfect for breakfast for the whole family or as a snack for the little ones. The cake has the sweet flavor of peaches, the rustic touch of farro, and the bold flavor of Greek yogurt. It's made with just a few simple, wholesome ingredients.

Preparation time 25 minutes

Ingredients

400 g of peach pulp

200 ml of water

40 g of sugar

2 eggs

180 g of granulated sugar

130g Greek yogurt

50 ml of corn oil

100 g of semi-wholemeal spelt flour

200 g of 00 flour

1 sachet of baking powder

lemon peel

Preparing the spelt and peach cake

Let's start by preparing the peaches: dissolve the sugar in a pan with water over low heat, add the chopped peach pulp and continue cooking for about 5 minutes.

Next, we strain the mixture into a sieve and let it cool.

In an electric mixer, combine the eggs and sugar and mix until light and fluffy.

We add the Greek yogurt and seed oil a little at a time.

Meanwhile, sift the yeast with the flour, add them to the mixture in the mixer, also adding the grated lemon zest.

Mix well until combined. Finally, fold in the chopped peaches and pour into a greased 24 cm cake pan.

Leave to cook in a fan oven at 170° for about 30 minutes.
