Ingredients for about 10 muffins

  • 300 g of
  • 00 flour
  • 220 g of granulated sugar
  • 145 ml of milk
  • 100 ml of seed oil
  • 150 g of whole yogurt
  • 50 g of instant coffee
  • 1 sachet of baking powder
  • 1 pinch of salt
  • 2 eggs
  • 8 g of icing sugar

For the coverage

300 g of whipping cream 2 tablespoons of coffee 4 tablespoons of icing sugar

Preparing Grandpa's Cup Muffins

Start by pouring the eggs into a bowl with the icing sugar and granulated sugar, start mixing with a whisk, gradually adding the other ingredients, then the milk, yogurt, oil, sifted flour, baking powder and salt, mix until you obtain a smooth mixture.

Butter and flour muffin cups, lining the hard ones with paper ones, filling them 3/4 full. Bake in a preheated oven at 180°C (350°F) for 15-20 minutes. After the indicated baking time, remove from the oven and let cool completely.

Meanwhile, pour the cream into a bowl, add the coffee and powdered sugar, and whisk until frothy and firm. Set aside the resulting cream in the refrigerator in a bowl covered with plastic wrap. Decorate the muffins just before serving, dusting them with bitter cocoa powder if desired. Enjoy!
