Almond shortcrust pastry for plum and meringue tart:
Step 1: Preheat the oven to 180°C. Combine the flour, ground almonds, and sugar. Add the diced butter and egg and quickly knead the dough.
Step 2 Wrap them in cling film and chill for 30 minutes.
Step 3 After this time, roll out the dough and line the tart pan with it. Prick the pastry with a fork.

Step 4 Before placing the cake in the oven, cover it with parchment paper. Sprinkle some dried beans on top to weigh it down. Bake for about 15 minutes.
Step 5: After this time, remove the cake from the oven and remove the baking paper and beans. Whisk the egg yolk and brush it over the cake, covering any cracks. Return the cake to the oven for about 10 minutes, or until golden brown. Remove the cake from the pan and set aside to cool.
Plum filling:
Step 6 Wash the plums, cut them in half, and remove the pits. Place them in a pot, add the sugar, and mix thoroughly.
Step 7 Mix the potato flour with water and pour it over the plums. Gently cook for about 5 minutes. Finally, add the cinnamon and stir.
Step 8 Let the plums cool and then place them on the baked cake.

Step 9 Preheat the oven to 120°C. Beat the egg whites and sugar at medium speed until smooth and shiny.
Step 10 Spread the meringue over the plums and then sprinkle with almond flakes.
Step 11 Place the cake in the oven and bake for approximately 70 minutes. Allow the cake to cool completely.
