Vegetable caviar

Vegetable caviar, where eggplant plays the starring role. Another option that I hope someone finds useful. It's easy to make, everyone loves it, and I highly recommend it.

Ingredients for "Vegetable caviar":

Coriander (ground) - 1 tsp.

Basil (dried) - 1 tsp.

Sugar (to taste) - 2 tsp.

Salt (to taste) - 1 tsp.

Vinegar (9%, table) - 2 tbsp.

Recipe "Vegetable caviar":

Prepare the vegetables, spices, and oil. The weights given are for peeled vegetables, so use slightly more. Wash the vegetables.

Peel the eggplants, cut the onion and eggplants into small cubes.

Fry the onion in well-heated oil for 5-7 minutes, over medium heat.

Add eggplant cubes + half of the sugar to the onion and fry, stirring occasionally, for 15 minutes.

Prepare tomatoes, peppers and garlic for chopping.

Grind in a blender or meat grinder.

Add spices to the eggplant mixture and continue frying for a couple more minutes at medium heat.

Pour in the tomato-pepper mixture, add salt and cook for another 20 minutes on the lowest heat, at the end add salt/sugar to taste.

At the end, pour in table vinegar, bring to a boil and place in dry, sterilized jars, roll up.

Output 1.5 l.

Store in a cool, dark place.

An excellent addition to meat, poultry, or sandwiches.

Great as a standalone snack, especially during Lent.
