Warm potato salad with cabbage and peas

Easy and warm potato salad with cabbage and peas, as well as a delicious herb dressing that tastes amazing!

I have been serving this delicious warm potato salad all summer long, as a side dish to all sorts of wonderful dishes. The quick-cooking kale and the crunchy fresh peas simply taste so good in the delicious warm potato salad.

You can serve it with everything from meatballs to delicious grilled cheese sausages, chops, chicken breast, vegetable skewers, corn on the cob and all sorts of other delicious things.

Warm potato salad with savoy cabbage

while I'm cooking

1 kg baby potatoes, or new potatoes

1 cabbage, finely chopped

150 g fresh peas

1 handful of broad-leaf parsley, finely chopped

Dressing

1 dl crème fraîche 18%

2 tablespoons mayonnaise

2 tsp dijon mustard

2 teaspoons sugar

1 handful chives, finely chopped

salt and freshly ground pepper

Scrub the potatoes and boil them until tender in a pan of lightly salted water.

Add the kale and peas to the pot, just a minute before the potatoes are tender, cover and pour off the water after a minute. The kale should just collapse and the peas should be cooked just right.

Let the potatoes, cabbage and peas cool slightly in a bowl and sprinkle with parsley.

Dressing Mix together the crème fraiche, mayonnaise, mustard, sugar, parsley, chives, salt and pepper to make a good dressing and season to taste.

Toss the dressing with the warm potatoes, cabbage and peas as soon as it has cooled slightly.
