Zucchini, goat cheese and pine nut tart in the Thermomix

Here's a zucchini, goat cheese and pine nut tart that everyone at my house loves! It's quick to make for dinner with a green salad on the side and it's a great way to use up zucchini 😊.

Ingredients · Servings 6
  • T45 flour - 200 grams
  • Butter - 100 grams
  • Salt - 4 pinches
  • Water - 60 grams
  • Eggs - 3
  • Thick fresh cream - 200 grams
  • Grated Emmental cheese (optional) - 35 grams
  • Ground four spices - 2 pinches
  • Pine nuts - 30 grams
  • Courgettes - 230 grammes
  • Goat cheese logs - 180 grams
  • Liquid honey - 3 tablespoons
  • Oregano - 1 tablespoon
Method · 46 min
  1. Put 200 grams of t45 flour into the Thermomix bowl.
  2. Add 100 grams of butter to the Thermomix bowl.
  3. Add 2 pinches of salt to the Thermomix bowl.
  4. Add 60 grams of water to the Thermomix bowl.
  5. Add the lid with the measuring cup
  6. Mix for 1 min/kneading speed.
  7. Form a ball, then roll out the dough on a sheet of baking paper using a rolling pin and place it in a tart pan.
  8. Prick the dough with a fork, even out the edge and chill.
  9. Wash and dry the Thermomix bowl.
  10. Place 3 eggs in the Thermomix bowl.
  11. Add 200 grams of thick cream to the Thermomix bowl.
  12. Add 35 grams of grated Emmental cheese (optional) to the Thermomix bowl.
  13. Add 2 pinches of salt to the Thermomix bowl.
  14. Add 2 pinches of ground mixed spice to the Thermomix bowl.
  15. Add the lid with the measuring cup
  16. Mix for 10 seconds/speed 4.
  17. Add 30 grams of pine nuts to the Thermomix bowl.
  18. Add the lid with the measuring cup
  19. Mix for 5 seconds/speed 3.5.
  20. Preheat the oven to 180°C.
  21. Place 230 grams of sliced ​​courgettes on top of the mixture in the Thermomix bowl.
  22. Place 180 grams of sliced ​​goat cheese logs on top of the mixture in the Thermomix bowl.
  23. Arrange them alternately on the pie base.
  24. Pour the egg mixture.
  25. Add 3 tablespoons of liquid honey to the mixture in the Thermomix bowl.
  26. Add 1 tablespoon of oregano to the mixture in the Thermomix bowl.
  27. Place in the oven for 35 minutes at 180°C. Fan-assisted setting. Monitor the cooking time according to your oven.
  28. Serve warm with a green salad.

Place 200 grams of T45 flour, 100 grams of butter, 2 pinches of salt and 60 grams of water in the Thermomix. Knead for 1 minute / kneading mode.

Place 3 eggs, 200 grams of thick cream, 35 grams of grated Emmental cheese (optional), 2 pinches of salt and 2 pinches of ground mixed spice in the Thermomix. Mix for 10 seconds / speed 4.

Add 30 grams of pine nuts to the Thermomix and mix for 5 seconds / speed 3.5.

Place 230 grams of courgettes cut into rounds and 180 grams of goat cheese logs cut into slices on top of the preparation.

Add 3 tablespoons of liquid honey and 1 tablespoon of oregano to the mixture.

The sweet and savory combination is a real plus, and the four spices are reminiscent of Christmas shortbread—perfect for this time of year! I'll definitely make it again One small comment about the recipe, though, which I didn't find very clear: it might be helpful to specify 1. For the dough and 2. For the filling. And to mention that the zucchini and goat cheese should be placed on the dough, not in the Thermomix. But these are minor details; the most important thing is the taste, which is truly amazing! I added a little garlic powder to the filling. I sliced ​​the zucchini very thinly; they were cooked perfectly and didn't release any water, the pastry was super crispy So good that I made it two nights in a row to use up two large zucchini from the garden that I picked before leaving.

I hesitated between 4 and 5 stars because I loved the originality of the zucchini/honey/four spices/goat cheese combination, and I enjoy sweet and savory dishes. We liked it, and this recipe is simple to make, allowing us to use up some of the last zucchini from the garden. But… for me, it's missing a little something to give this recipe a bit more depth… Perhaps more four spices, pepper, or mustard? Maybe it's just a matter of taste and the right amount of spices. My zucchini were a little undercooked too… maybe I should have steamed them beforehand. The only changes I made were using puff pastry that was nearing its expiration date and replacing the pine nuts (which were completely out of stock! ) with chopped hazelnuts.
