Cured turkey breast with vegetables in tomato sauce, DS XXV, episode 13

How to prepare cured turkey breast with vegetables in tomato sauce?

Bring the water to a boil. Add the garlic cloves, black pepper, Prymat bay leaf, Prymat allspice, and Prymat pickling salt. Boil for 2-3 minutes, then let cool completely. Place the turkey breast in the marinade, completely covering the meat, and refrigerate for 2-3 days. Turn the meat daily.

Remove the meat from the marinade and pat dry thoroughly with paper towels. Then transfer it to a baking dish with a mixture of oil and sweet paprika. Bake in an oven preheated to 170°C (350°F) for approximately 35-40 minutes.

Dice the onion. Cut the carrots, peppers, and zucchini into strips, and finely chop the garlic.

Heat the oil in a pan. Sauté the onion and garlic for 3-4 minutes, then add the carrots, bell peppers, and zucchini. Season with salt, pepper, oregano, and thyme. Add the peeled and diced tomatoes. Cook for about 10 minutes.

Place vegetables in tomato sauce on a plate and arrange slices of roast turkey on top.
