Halloween cookies: the easy recipe for decorating and enjoying

8 pers.

Ingredients · Servings 8
  • 530 g Flour
  • 225 g Softened butter
  • 165 g Powdered sugar
  • 1 Egg
  • 1 pinch of salt
  • 250 ml Icing sugar
  • 1 egg white
  • 1 tablespoon Vanilla flavoring
  • 1 teaspoon of cinnamon
  • 0.5 teaspoon Nutmeg
Method · 30 min
  1. Preheat the oven to 160°C (325°F) so it's nice and hot when you put the cookies in. Meanwhile, gather all the ingredients and prepare your equipment: a large mixing bowl, a whisk or mixer, a spatula, plastic wrap, a rolling pin, cookie cutters or a glass, a baking sheet, and parchment paper. This preparation will allow you to work smoothly and achieve a consistent result.
  2. In a large bowl, cream the softened butter with the powdered sugar until smooth and creamy. The mixture should become soft and slightly pale. This step is crucial for the final texture of the cookies, as it helps to distribute the sugar evenly. You can use a sturdy whisk or a mixer, making sure to scrape down the sides of the bowl.
  3. Add the egg to the butter and sugar mixture, then stir in the vanilla extract and a pinch of salt. Mix again until the mixture is smooth and perfectly combined. Take your time to ensure a homogeneous base, free of any unincorporated egg. The vanilla will delicately flavor the dough, and the salt will balance the sweetness.
  4. Gradually add the flour to the mixture, first stirring with a spatula to avoid splashing. When the dough becomes thicker and crumbly, continue working it with your hands to bring it all together. You should obtain a soft, smooth dough that is firm enough to roll out. Avoid overworking it to ensure the cookies remain pleasantly tender after baking.
  5. Form the dough into a ball, flatten it slightly to aid cooling, then wrap it tightly in plastic wrap. Refrigerate for 1 hour. This resting time firms up the butter and makes the dough easier to roll out and cut. It also helps the cookies hold their shape better during baking, which is ideal for crisp, clean Halloween cookies.
  6. Remove the dough from the refrigerator and let it rest for a few minutes if it's too firm. Then, roll it out on a lightly floured work surface to an even thickness. Cut out the cookies using an inverted glass or Halloween-shaped cookie cutters if you have them. Place them on a baking sheet lined with parchment paper, spacing them slightly apart.
  7. Place the baking sheet in the preheated oven and bake the cookies for about 10 minutes. Keep a close eye on them: the cookies should remain fairly pale, with just a light golden color around the edges. Overbaking will make them drier and less pleasant to decorate. Once out of the oven, carefully transfer them to a wire rack to cool completely.
  8. While the cookies cool, prepare the icing. In a bowl, whisk the egg white with the powdered sugar until smooth, glossy, and fairly thick. Add the cinnamon and nutmeg, then whisk again to distribute the spices evenly. If the icing seems too thick, thin it with a very small amount of additional egg white, drop by drop.
  9. Once the cookies are completely cool, apply the icing using the back of a small spoon, a pastry brush, or a piping bag, depending on the desired effect. Spread an even base, then have fun drawing simple Halloween-themed designs: eyes, smiles, ghosts, or graphic shapes. For fine details, you can use a toothpick. Work carefully to achieve a neat and delicious decoration.
  10. Allow the decorated cookies to air dry until the icing is completely set. This step is essential to prevent the designs from running or getting damaged when you store them. Once the cookies are completely dry, store them in an airtight container. This will help them retain their texture and aroma longer, and they'll be ready to serve at a Halloween party or as part of a festive gathering.
