Udon carbonara is a fusion version that replaces classic pasta with udon noodles and introduces dashi broth for an umami flavor. It retains the essential elements of traditional carbonara—crispy guanciale, egg/pecorino mixture, and black pepper—but infuses the noodles in a Japanese broth, offering a different flavor profile without betraying the Italian spirit.

The key is to thoroughly emulsify the egg and pecorino mixture with the guanciale fat, then bind it off the heat with a little hot water from the pan. This prevents the eggs from coagulating and avoids scrambling, guaranteeing a velvety, creamy texture similar to pasta carbonara.

Ideally, cook the udon noodles in dashi broth for that distinct Japanese flavor, but if you don't have any, simply use the udon cooking water.
