Camille's favorite restaurants
With unparalleled gentleness, artist and composer Camille Dalmais, known by her stage name Camille, has just released her new album, The Sound of Milk, exploring the connections between motherhood, transmission, and creation.
The latest culinary revelation?
I'm going to talk about a product instead: purslane. I discovered it at the greengrocer's in my village in the Dordogne. I eat it as is, but you can also mix it into a salad or with fruit. I love it.
The restaurant with the best soundtrack?
To be perfectly honest, I prefer restaurants with very little music. However, when I'm in Paris, I love going to Soya in the 11th arrondissement. The music is quite loud, but they have a small, quiet room in the back that I adore. I always order the mezze platter because I like to try several different things. Their seaweed tartare is delicious.
The perfect spot to get away from it all?
The Climate Academy: they have a small courtyard and I feel comfortable there; it's pleasant and lively. Even children can play quietly. I order a herbal tea there, something very simple.
The recipe that will impress!
My partner and I share the kitchen chores. He takes care of everything that requires cooking, and I tend to do more "raw" dishes. For example, a beautiful salad made with mixed greens, aromatic herbs, raw corn kernels, and peas when they're in season… I blanch them quickly so they have a nice crunch. And to add a touch of color, I grate carrots and add lacto-fermented cauliflower or red cabbage, then a few sunflower seeds, and the dressing, always on the side.
What's on the agenda right now?
My new album, The Sound of Milk, was released on September 18th! It celebrates breast milk as the primary food source. It's fifteen years of motherhood that I recount through song.

– La Chassagnette, Arles: “It’s everything I love and tolerate in cooking because I don’t like it when food is over-processed. It’s a true place of local produce, with beautiful tables and I love strolling in the vegetable garden.”
– Omen Azen, New York: “It’s a very simple place and even though I never usually eat fish, I tasted a dish of freshly grilled cod with a miso marinade, it was like milk! I felt such a strong emotion… It was very moving.”
– Bloom, London: “A two-story vegetarian restaurant with a tea room on the ground floor. The service is incredible, it really impressed me, the food is quite refined and the ingredients are high quality. I've been several times, I love it.”
