Shakshuka in the Thermomix
Shakshuka, also spelled and pronounced tchektchouka, tchoukchouka, tchouchkaka, or tchoutchouka, is a culinary specialty of North African cuisine. The name of this dish is thought to come from "shakshek," a Berber word meaning "mixture."
- Cumin seeds - 2 teaspoons
- Oregano - 0.75 teaspoon
- Caraway seeds - 2 teaspoons
- Turmeric - 0.5 teaspoon
- Smoked paprika - 1 teaspoon
- Salt - 1.5 teaspoons
- Pepper - 0.75 teaspoon
- Garlic cloves - 3
- Red chili pepper - 0.5
- Yellow onion - 1
- Olive oil - 25 grams
- Crushed tomatoes - 800 grams
- Tomato paste - 30 grams
- Honey - 20 grams
- Apple cider vinegar - 10 grams
- Fresh spinach - 30 grams
- Fresh coriander - 6 leaves
- Eggs - 8
- Feta - 125 grams
- Fresh coriander - 4 sprigs
- Put 2 teaspoons of cumin seeds in the Thermomix bowl.
- Add ¾ teaspoon of oregano to the Thermomix bowl.
- Add 2 teaspoons of caraway seeds to the Thermomix bowl.
- Add ½ teaspoon of turmeric to the Thermomix bowl.
- Add 1 teaspoon of smoked paprika to the Thermomix bowl.
- Add 1.5 teaspoons of salt to the Thermomix bowl.
- Add ¾ teaspoon of pepper to the Thermomix bowl.
- Add the lid with the measuring cup
- Spray for 1 min/speed 10.
- Add 3 peeled and halved garlic cloves to the Thermomix bowl.
- Add ½ deseeded red chili to the Thermomix bowl.
- Add 1 peeled yellow onion, cut into quarters, to the Thermomix bowl.
- Add the lid with the measuring cup
- Mix for 3 seconds/speed 7.
- Add 25 grams of olive oil to the Thermomix bowl.
- Add the lid with the measuring cup
- Cook for 3 min/100°C/speed 1.
- Add 800 grams of crushed tomatoes to the Thermomix bowl.
- Add 30 grams of tomato paste to the Thermomix bowl.
- Add 20 grams of honey to the Thermomix bowl.
- Add 10 grams of cider vinegar (or wine vinegar or, failing that, balsamic vinegar) to the Thermomix bowl.
- Add the lid with the measuring cup
- Cook for 15 min 30 sec/100°C/speed 1.
- Add 30 grams of roughly chopped fresh spinach to the Thermomix bowl.
- Add 6 chopped fresh coriander leaves to the Thermomix bowl.
- Add the lid with the measuring cup
- Cook for 5 min/100°C/speed 1.
- Preheat a pan over medium heat with a little olive oil.
- Transfer the contents of the Thermomix into the hot pan and level the surface using the spatula.
- Place 8 eggs on top of the mixture in the pan in the Thermomix bowl.
This is a spiced tomato stew/sauté that can be enjoyed as an appetizer with bread or as a main course, accompanied by meat or fish, a salad, or hummus. The most classic and common recipe is based on tomatoes and onions, topped with hard-boiled eggs. Here, I'm sharing David Lebovitz's version, which he adapted from Yotam Ottolenghi's book Jerusalem, but there are countless variations depending on the country, and some recipes include peppers or eggplant, for example, adapting it according to the season.
It's a family dish, inexpensive, full of flavor, quick and easy to prepare! Plenty of good reasons to try it .
Place 2 teaspoons of cumin seeds, ¾ teaspoon of oregano, 2 teaspoons of caraway seeds, ½ teaspoon of turmeric, 1 teaspoon of smoked paprika, 1½ teaspoons of salt and ¾ teaspoon of pepper in the Thermomix. Blend for 1 minute / speed 10.
Add 3 peeled and halved garlic cloves, ½ deseeded red chili pepper and 1 peeled and quartered yellow onion to the Thermomix. Mix 3 sec / speed 7.
Add 25 grams of olive oil to the Thermomix and cook for 3 minutes / 100°C / speed 1.
Add 800 grams of crushed tomatoes, 30 grams of tomato paste, 20 grams of honey and 10 grams of cider vinegar (or wine vinegar or, failing that, balsamic vinegar) to the Thermomix. Cook for 15 minutes 30 seconds / 100°C / speed 1.
Add 30 grams of roughly chopped fresh spinach and 6 chopped fresh coriander leaves to the Thermomix. Cook for 5 minutes / 100°C / speed 1.
Place 8 eggs and 125 grams of crumbled feta (adjust according to taste) on top of the mixture in the pan.
Do not stir and let simmer uncovered for about 10 minutes.
Cover the pan with a lid and cook for another 3 to 5 minutes (adjust the cooking time by a few minutes or more depending on your preference for how you like your eggs cooked).
Place 4 sprigs of fresh coriander (leaves only) and finely chopped over the preparation when serving.
Serve immediately.
assiamaissa rated this recipe 5/5, 4 years and 9 months ago. This recipe is more of an oriental version, where they don't use spinach but rather bell peppers, and no feta either. It's a good recipe, even though it releases a bit too much water in the Thermomix, so I had to remove some of the liquid and reduce it a little in the tagine. My tip for more flavor is to grill the vegetables and garlic beforehand (in the oven or directly over a flame, skin-side down, which you then peel off).
