Potato croquettes with tuna
These croquettes are made with cooked potatoes, and in this case, we're going to add canned tuna. Of course, you can substitute the tuna with ham, leftover stew meat... In short, it's a great way to use up leftovers.

- 400g of cooked potato
- 1 egg
- 1 can of tuna in oil (drained tuna)

- Nutmeg
- Breadcrumbs
- Frying oil
Method · 20 min
- We boil the potatoes in water. We take them out and put them in a bowl and let them cool. We mash them with a fork.
- Add the drained tuna, the egg, salt, pepper, and nutmeg.
- I didn't need to, but if you find the dough is too loose, you can add a couple of tablespoons of breadcrumbs or even Parmesan cheese. The dough should look like this:
- We form the croquettes with a couple of spoons. We coat them in breadcrumbs.
- We put plenty of oil in a frying pan. We fry the croquettes.
- We take them out and place them on a plate lined with absorbent paper. We serve them immediately, while they are still hot.
Once the potatoes are cooked and cooled, the dough comes together in no time. Simply mash the potatoes and mix in the other ingredients.
The next step, shaping and frying them, is exactly the same as for traditional croquettes.
