Potato Croquettes

1 egg

  • 25 gr. grated aged Kashar cheese

Salt

1 pinch of fresh mint

Ingredients for the filling

1 tablespoon of honey

Wrap your potatoes in foil and bake in a preheated oven at 180 degrees Celsius until they are very soft. Peel the softened potatoes and mash them in a mixing bowl. Add the egg, grated aged cheddar cheese, salt, pepper, and grated nutmeg to the mashed potatoes and mix. Then add the finely chopped parsley and fresh mint and mix again.

Cut the fresh kashar cheese into baton shapes. Cover the cheese with the prepared potatoes.

Place flour, egg, and breadcrumbs in separate glass bowls. Shape the chilled mashed potatoes into round or elongated shapes. Coat the prepared potato croquettes successively in flour, egg, and breadcrumbs. Heat sunflower oil in a pan. Add the prepared croquettes to the heated oil and fry until golden brown. Remove the fried croquettes to a plate lined with paper towels to drain excess oil. In a mixing bowl, combine mayonnaise, mustard, and honey. Serve the prepared croquettes with the sauce.
