Sausage Pasta

  • cherry tomatoes
  • sausage
  • garlic
  • shallot
  • olive oil
  • flake salt
  • Salt & Pepper
  • fresh pasta
  • riven parmesan
  • fresh basil
Method · 1 h 20 min
  1. Preheat the oven to 175 degrees.
  2. Cut the salsiccia in half and discard the skin, cut into 1 cm pieces
  3. Cut the cherry tomatoes in half and peel the garlic cloves.
  4. Peel and roughly chop the shallots.
  5. Take a baking sheet and line it with baking paper. Place the tomato halves cut side up on the sheet. Lay out the garlic cloves.
  6. Heat the olive oil and fry the salsiccia and onion without browning. Press in the garlic.
  7. Roast the tomatoes and garlic in the middle of the oven for 60 minutes.
  8. Mix in the tomato base and fry further on medium temperature.
  9. When it's done, take out the baking sheet and put both the tomatoes and garlic in a blender, add the olive oil and salt and blend together.
  10. Season with salt and pepper and set aside.
  11. Set aside for now.
  12. Bring salted water to a boil and cook the pasta to your liking, but remember step seven here as it will be cooked there as well.
  13. Drain the water from the pasta and drizzle with olive oil and mix. Pour the pasta over the salsiccia and mix, place on low heat.
  14. Grate the Parmesan cheese on the coarse side of the grater.
  15. Serve pasta salsiccia and sprinkle with parmesan cheese and freshly ground pepper, top with basil.
