Pasta with minced beef ragu and baked tomatoes

- Set the oven to 200 degrees.
- Cut the tomatoes in half. Place them in a baking dish. Drizzle with a little olive oil, a pinch of salt and black pepper. Roast in the oven while you cook the ragu, about 15-20 minutes.
- Accessories: Cook the pasta according to the instructions on the package.
- Ragu: Peel and finely chop the onion and garlic. Peel and grate the carrots. Fry in a frying pan or in a large saucepan with a little olive oil. Add the minced meat. Break it up with a fork and brown until it has a nice color.
- Divide the broccoli head into smaller florets and add to the minced meat.
- Add thyme, chili powder, salt, pepper, white wine vinegar, water, tomato paste and broth. Simmer over low heat for 5-10 minutes.
- Strain the pasta water. Mix the pasta and tomatoes with the ragu. Serve with paesano.
