Make your own sumac onions
Pickled onions / with sumac

- red onions
- White wine vinegar
- Water
- Zucker
- Salt
- Sumac
Method
- Peel the red onions, cut them into very thin half-rings and place them in a heat-resistant bowl.
- Mix the vinegar with the water, sugar and salt in a pot and bring everything to a brief boil.
- Pour the liquid over the onions. Add the sumac, mix everything together, and let the onions marinate for at least 30 minutes.
These pickled sumac onions are quick to prepare and a wonderfully flavorful accompaniment to many Middle Eastern and Turkish dishes. The red onions marinate in a sweet and sour brine, and the sumac gives them their characteristic fruity-sour note. They're ready to serve in just 30 minutes. The sumac onions are excellent with meat dishes, bowls, salads, or as a topping for flatbreads and wraps. They're also particularly delicious as a topping for mini lahmacun: together with crisp lettuce and lemon yogurt, they add a fresh, spicy touch. You can easily prepare the onions in advance and let them marinate in the refrigerator until ready to serve.
