Fragrant Lagman with Chicken: An Eastern Dish You'll Want to Eat Again

Thick lagman is a harmonious blend of noodles, juicy meat, and vegetables infused with spicy spices. Traditionally, the dish is made with lamb, but chicken brings out a new flavor in lagman, making it more tender and delicate while retaining all the richness of its oriental flavor.

Ingredients for chicken lagman

  • Chicken fillet or thigh - 400-500 g
  • Carrots - 1 pc.
  • Onion - 1 pc.
  • Bell pepper - 1 pc.
  • Potatoes - 2 pcs.
  • Tomatoes - 2 pcs. (or 2 tbsp. tomato paste)
  • Garlic - 2 cloves
  • Vegetable oil - 2-3 tbsp.
  • Greens - for serving
  • Water or chicken broth - 1-1.5 l

A step-by-step recipe for classic chicken lagman

  • Cut the chicken into small pieces. Heat oil in a frying pan or cauldron and fry the chicken until lightly browned.
  • Add chopped onion, carrot, and bell pepper. Fry for 3-5 minutes.
  • Add tomatoes or tomato paste and simmer for another 5 minutes.
  • Place chopped potatoes and garlic, pour in water or broth, add spices, salt and pepper.
  • Bring to a boil, reduce heat and simmer, covered, for 20-25 minutes until vegetables and chicken are tender.
  • At the same time, boil the noodles in salted water until done, drain in a colander.
  • Place the noodles in a bowl and top with the chicken goulash, vegetables, and broth. Sprinkle with fresh herbs.
  • Serve hot!
