In addition to mazurek (Polish mazurek) and babka (baked cakes), it's worth ensuring that small, sweet snacks appear on the holiday table. Shortbread cookies layered with rose jam are a great idea. They're perfect on Boxing Day as an accompaniment to afternoon coffee or tea.
Ingredients
- 300 g flour
- 130 g sugar
- 170 g butter
- 1 egg
- 1 teaspoon vanilla paste
- Rose marmalade
Sift the flour onto a pastry board and mix with the sugar. Add the butter and cut in using a knife. Add the egg and vanilla paste, and quickly knead the dough.
Form a ball from the mixture, wrap it in cling film or baking paper and place in the fridge for 50 minutes.
Roll out the chilled dough to a thickness of 5 mm. Using a round cookie cutter, cut out an even number of cookies. In half of them, cut out a chicken shape.
Place the cookies on a baking sheet lined with baking paper. Bake at 170 degrees Celsius for about 15 minutes. Then set aside to cool.
Spread marmalade on the cooled, round cookies and cover with a cookie with a pattern cut out.
