Curd cheesecake with fruit II

Summer is all about fruit desserts, and this simple layer cake is proof of that. Juicy seasonal fruit combined with a flaky pastry creates a delicious dessert that is best enjoyed with a cup of coffee.

Ingredients · Servings 1 sheet
  • Dough:
  • 3 cups of semi-coarse flour
  • 1 cup powdered sugar
  • 250 g Power
  • 1 baking powder
  • Filling:
  • 500 g cottage cheese in foil
  • 1 cup powdered sugar
  • 1 cup of milk
  • 1 vanilla sugar
  • Further:
  • 500 g strawberries and blackberries
  • grease for wiping the sheet metal
  • coarse flour for dusting the baking sheet
Method · 50 min
  1. Grease a baking sheet and sprinkle with coarse flour. Preheat the oven to 180 °C.
  2. Make a crumb mixture from the dough ingredients and pour half of it onto the baking sheet.
  3. Mix the filling with cottage cheese, sugar, milk and vanilla sugar. Pour it over the dough, sprinkle with fruit and the remaining half of the crumbs.
  4. Bake in the oven at 180 °C for about 35 minutes. Check the doneness with a skewer - insert it into the center of the cake and it should remain dry when pulled out.
