Spicy Tuna Yaki Onigiri

Elevate your date night dinners with these crispy Spicy Tuna Yaki Onigiri, a delightful Japanese-inspired treat that’s also perfect for brunch or a savoury afternoon pick-me-up.

Ingredients · Servings 4
  • 1 canned tuna
  • 2 tablespoons kewpie mayo (Japanese mayonnaise)
  • 1 tablespoon sriracha
  • ½ teaspoon sesame oil
  • ¼ teaspoon shichimi togarashi (Japanese seven spice)
  • 2 tablespoons scallions, green parts only, thinly sliced
  • 1.5 cups Japanese short grain rice (sushi rice)
  • 1 tablespoon rice vinegar
  • 1 tablespoon furikake
  • 2 teaspoons black sesame seeds
  • ½ teaspoon sesame oil
  • 2 tablespoons mirin
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1 nori sheet, cut into 2 inch slices
  • kewpie mayo (Japanese mayonnaise), for garnish
  • shichimi togarashi (Japanese seven spice), for garnish
Method · 30 min
  1. In a medium bowl, stir together the tuna, Kewpie mayo, sriracha, sesame oil, shichimi togarashi, and scallions until well mixed. Set aside.
  2. Cook the rice according to package instructions and let it cool for 10 minutes. Add the rice vinegar, furikake, black sesame seeds, and sesame oil, and gently fold to incorporate. Set aside.
  3. In a small bowl, stir together the mirin, soy sauce, and sesame oil until combined. Set aside.
  4. Wet your hands to prevent sticking. Scoop ¼ cup of the seasoned rice and flatten it in your palm. Place 2 tablespoons of the tuna filling in the center. Cover with another scoop of rice and press firmly to enclose the filling, then shape into a triangle. Repeat with the remaining rice and filling.
  5. Heat a nonstick skillet over medium heat and add a thin layer of oil. Add the onigiri and pan-fry for 3 minutes per side, until lightly crisp and golden.
  6. Reduce the heat to low. Brush both sides of each onigiri with the soy sauce glaze and cook for 15 seconds per side, until the glaze is set and the onigiri are golden.
  7. Wrap each onigiri with a strip of nori, drizzle with Kewpie mayo, and sprinkle with shichimi togarashi. Onigiri are best enjoyed the same day they are made.
