Salmon with pesto

Ingredients · Servings 4
  • 4 pieces of salmon fillet
  • 3 ss pesto
  • 1 piece of summer cabbage
Method · 25 min
  1. Preheat the oven to 180 degrees.
  2. Season the salmon pieces with salt and pepper, place them in a greased ovenproof dish, and spread each piece with an even layer of pesto.
  3. Remove the outermost leaf from the cabbage and cut off a little of the bottom of the stem if necessary. Divide the cabbage into four even pieces.
  4. Place the salmon in the oven and bake for 8-12 minutes, depending on the thickness of the fish pieces.
  5. Bring some water to the boil in a saucepan or pan. Add the cabbage and sprinkle with a good pinch of salt. Add a pat of butter on top and steam the cabbage for about 5 minutes, or until it is barely tender.
  6. Serve the pesto salmon with freshly steamed summer cabbage.

Salmon with pesto is simple and very good, but this recipe also works brilliantly with trout or white fish. Crispy and juicy summer cabbage is a lovely accompaniment no matter the color of the fish.
