Vegan and super easy potato pancakes
As a child, I loved potato pancakes with applesauce! My grandma always made the best potato pancakes, or fritters, in the world. However, I haven't eaten potato pancakes for years. So it was high time I made vegan potato pancakes for the blog, and the result is definitely something to be proud of!
- 150g red lentils
- 1 red onion, finely chopped
- Chop 2 cloves of garlic finely.
- 2 medium-sized potatoes (raw)
- 1 medium carrot
- 5 The Mehl
- 1/2 tsp smoked paprika powder
- 1 tsp sweet paprika powder
- 1 tsp dried marjoram
- Salt
- Pfeffer
- 3 The Vegan Mayonnaise
- 1 tsp tomato paste
- 1 tsp garlic powder
- 1/2 tsp smoked paprika powder
- Salt
- Pfeffer
- Sriracha sauce, to taste
- Prepare the red lentils according to the package instructions.
- Grate the potatoes and carrots on a large grater.
- Mix the cooked red lentils, flour, garlic, onion, and spices in a bowl.
- Heat some oil in a large frying pan and form a potato pancake from approximately 1 1/2 tablespoons of batter.
- Fry in a non-stick pan over medium heat for about 3-4 minutes on each side until crispy. Alternatively, you can also prepare them in the oven.
The red lentils add a good amount of protein to the potato pancakes. I like to eat them with a dip and a fresh salad.

Are potato pancakes vegan?
Most potato pancakes are made with eggs and are therefore not vegan. However, it's super easy to leave out the egg and prepare vegan potato pancakes without it. Sometimes potato pancakes are also "accidentally" vegan, for example at Christmas markets. So it's sometimes worth simply asking.

- smoked paprika powder
- sweet paprika powder
- dried marjoram
- salt and pepper

How do you make potato pancakes without eggs?
Making potato pancakes without eggs is very easy!
- Mix in a bowl with the cooked red lentils, garlic, onion and spices.
We ate the vegan potato pancakes with sriracha mayonnaise, which was absolutely delicious. I made it by mixing vegan mayonnaise with tomato paste, garlic powder, smoked paprika, and sriracha, a Thai chili sauce. You can find sriracha in the Asian section of the supermarket.
