- We start the green bean stew recipe by browning the diced bacon in fat over low heat. Once it has browned and rendered fat, add the chopped red onion.
- Season with salt and pepper. When the onion has turned slightly white, add the garlic and diced bell pepper. Sprinkle with the red pepper and sauté for a few minutes, stirring occasionally, until the bell pepper collapses a little.
- Then add the tomatoes, and when they have released a little juice, add a little more water. You can also add the bay leaf, celery stalk, and finally the butter beans.
- Mix well and, if necessary, add a little water (just enough to cover the beans).
- Cook for about 30 minutes, or until the green beans are tender. You don't need to cover them, as the sauce will thicken a bit. Serve the finished green bean stew with sour cream and a slice of fresh bread.
