Knafeh
Ingredients for 6 people
- 50 g peeled almonds
- 3 tbsp pistachio kernels
- 100 g Butter
- 200 g angel hair pastry strands (Kadayif, Turkish grocery store)
- 250 g Mozzarella
- 1 TL Zimtpulver
- 85 g sugar
- 2 tablespoons of rose water (from an oriental grocery store)
- 2 tsp. ground saffron
- Preheat the oven to 250°C (480°F). Meanwhile, chop the almonds and pistachios separately. Melt the butter in a pan. Stretch the kadayif dough strands and toss them in the melted butter. Spread half of the dough strands in a baking dish. Coarsely grate the mozzarella, distribute it over the strands, and cover with the remaining dough strands. Sprinkle with the chopped almonds and cinnamon.
- Place the dish on the oven rack (middle rack), reduce the temperature to 200°C (390°F), and bake the pasta strands for about 30 minutes. Meanwhile, in a small saucepan, bring the sugar, rosewater, and saffron to a boil with 200 ml (¾ cup) of water. Continue to boil, stirring constantly, until the sugar is dissolved and the syrup is very hot.
- Once the baking time is complete, remove the casserole dish from the oven and pour the hot sugar syrup over the pasta. Sprinkle with pistachios and enjoy the dessert while it's still hot.
